One Pot Ground Beef Quinoa
 
 
Serves: 4-6
Ingredients
  • 1 lb ground beef
  • 1 cup quinoa
  • 1 can fire roasted tomatoes
  • ½ can corn
  • ½ can vegetable or chicken broth
  • 1 tsp chili powder
  • ½ tsp cumin
  • ¼ tsp cayenne
Instructions
  1. Brown ground beef in a large skillet on medium heat.
  2. Add remaining ingredients, mixing until everything is stirred in.
  3. Bring to a boil, then cover and reduce to a simmer.
  4. Cook for about 20 minutes or until quinoa is cooked through.
