Happy almost-Thanksgiving! I am thankful for friends, family, my health, and Baileys. Baileys sent me Baileys Pumpkin Spice Liqueur to experiment with in the kitchen, and boy did I.
I may have neglected to mention when I wrote my Baileys Pumpkin Spice Adult Milkshake recipe that on the day I was crafting that delightful little milkshake, I found myself a little tipsy. Okay, okay. A LOT tipsy.
You see, on the weekends Xavier likes to sleep in, so I wake up early and blog. My Baileys recipe was on the top of my to-do list, so I got crackin’. At 9 a.m.
The recipe makes two milkshakes. When Xavier awoke I offered him milkshake number two, hoping he could offer me his thoughts on the taste. Unfortunately, I was reminded that he doesn’t really care for pumpkin AND he really thinks milkshakes aren’t appropriate breakfast food. Go figure.
After photographing my creation, I sipped my milkshake (on an empty stomach) while importing the pictures and writing up my blog post. Then. Suddenly. It hit me.
I was drunk.
On a Sunday.
I was so bewildered, I told my loving husband who proceeded to laugh at me (and with me).
When I set out to make my mudslide recipe, I was determined to not let Baileys Pumpkin Spice Liqueur get the better of me. My game plan? Not to drink on an empty stomach. It worked like a charm (again, go figure).
I’m very excited about my Baileys Pumpkin Spice Mudslide. Adult milkshakes have a near and dear place in my heart and belly, and the Pumpkin Spice Liqueur is so good! Forget real pumpkin. Seriously.
- 3 oz Baileys Pumpkin Spice Liqueur
- 2 oz whipped cream vodka
- 1 cup ice
- ½ tsp pumpkin pie spice
- 1 pt (2 cups) vanilla ice cream
- chocolate syrup
- whipped cream
- Add Baileys Pumpkin Spice Liqueur, vodke, ice, pumpkin pie spice and vanilla ice cream in a blender and blend until combined.
- Cover inside of glass in chocolate syrup (have fun!) then pour in the milkshake mixture.
- Top with whipped cream.
- Serve with a straw or spoon.
