Today marks the first day of September, which also happens to be the beginning of the Vegan Month of Food. I am participating with the goal of blogging as much as I can AND sticking to a 100% vegan diet for 30 days. I’ve wanted to sign up for Vegan MoFo for FOUR YEARS (ever since my What Tasty Food days), but I always seem to miss the sign up, so I added it to my 101 in 1001 goals list (as well as my calendar). One of my other 101 goals is to go vegan for a month. While veganism doesn’t automatically equal healthy (oreos, anyone?), I think there’s a lot to be said for a diet rich in fruits, veggies and grains, and I’m so excited to explore this lifestyle.
One of my greatest challenges with sticking to a vegan diet in the past has been establishing new go-to meals. I’ve been brainwashed for so long about what each meal should look like (breakfast- cereal and milk, lunch- turkey and cheese sandwich, dinner- meat and a side), that sometimes it’s hard to think outside of the box. The prompt for day one is all about breakfast, so I wanted to think of ways to shake up my standard morning meal. Introducing: FANCY TOAST.
Peanut Butter Banana Toast
- Natural chunky peanut butter
- Chia Seeds
Hummus, Cucumber & Tomato Toast
- Cucumber, sliced thin
- Cherry Tomatoes
- Tip: Turn this into a great sandwich with spinach and a splash of Italian dressing
Hummus, Avocado & Agave Toast
- Sea Salt
Apple Cinnamon Toast
- Butter (Try Earth Balance Buttery Spread)
- Apple, sliced thin
- Pure maple syrup
