As Autumn approaches, I have Fall flavors and hot dishes on the brain. Mmm, comfort food! I wrote about Made With Love: The Meals On Wheels Family Cookbook in November, and it is ALL about comfort food. From sloppy joes to chicken casserole, this cookbook has it all.
Meals on Wheels Association of America provides more than one million meals a day to seniors across the country. It is the oldest and largest national organization of its kind. More than 100 celebrities, chefs, athletes, writers and politicians, from Paula Deen and Martha Stewart to Al Roker and Dr. Maya Angelou, contributed to this cookbook to help the organization’s fight to end senior hunger in America.
Lately I’ve been grabbing this off the shelf for one recipe in particular, Colorful, Low-Calorie, Curry Cauliflower (page 200) contributed by Linda Berns of CustomKosher, LLC. I am absolutely obsessed with curry. I never ate much Indian food growing up, so when I discovered this Indian restaurant nearby I absolutely fell in love. Why have I never tried this before? I’ve been experimenting in my own kitchen, and this recipe is a winner.
My only comment about the recipe is that it took my cauliflower a bit longer than expected to soften, and the recipe never says when to add the shredded carrots… I just added them in at the same time as the cauliflower. When it was all said and done, I was blown away by the flavor. And Xavier liked it, too! We treated it as a side dish to some crispy fried tofu, but I’d throw in some chickpeas or rice and make it a main dish any day.
