Slowcooker chicken is the best. I really don’t like cooking meat, but the Crockpot makes it so effortless. If I can dump a bunch of ingredients in the crockpot and return hours later to a tasty meal, I’m a happy camper. In honor of Memorial Day Weekend, I thought I’d share this insanely easy, incredibly inexpensive BBQ chicken recipe.

I’ve seen several variations of this recipe use brown sugar, liquid smoke and a variety of condiments, but you really just need three things: chicken, BBQ sauce and Zesty Italian Dressing. The end. Keep it simple!

We have made this twice now, and I would definitely make again and again and again. The recipe makes so much food, Xavier and I are able to make many meals out of it. It calls for 6 chicken breasts, which I definitely think serves more than 6. My guess is about 8 because that’s about how many sandwiches we get out of it.

Today we’re grilling chicken and enjoying some of this wonderful Colorado sunshine! This is very easy to do as well. All I have to do is buy chicken and charcoal and hand over to Manchild. I’ve learned rather quickly that Xavier really enjoys cooking if, and only if, it involves grilling.


Right now the backyard is a bit of an eye sore, but the landlords are getting the garden into shape! I will keep you all posted as the garden progresses.

Zesty Italian BBQ Crockpot Chicken

Serves: 8
  • 3 lb boneless skinless chicken breasts (about 6 breasts)
  • 1 12oz bottle BBQ (we used Kraft Think'n Spicy Brown Sugar)
  • ½ cup zesty Italian dressing (we used Kraft Zesty Italian Fat Free)
  • 1 tbsp cornstarch (optional)
  1. Place chicken into the bottom of the Crockpot and pour sauces over top.
  2. Set to low for 6-8 hours or high for 4-6 hours (6 hours on low is perfect in my Crockpot).
  3. When done, remove chicken breasts and set aside.
  4. (OPTIONAL) In a small bowl or mug, dissolve cornstarch in about ¼ cup of liquid from the slow cooker. Pour cornstarch mixture into the Crockpot and stir to combine. Cover and cook on high for 20-30 minutes.
  5. Shred chicken using two forks and return to the Crockpot after the sauce has thickened. Mix well.

[EDIT 2/2/14] I made this chicken for the Super Bowl and brought King’s Hawaiian Rolls to make sliders, and it was a hit! I even made it on the King’s Hawaiian Facebook page! The rolls started disappearing before anyone even dove in to the chicken. Once the rolls vanished, I thought that would be that, but the chicken was devoured as well. It was a sad game, but at least the food was good!
