There are so many trends on Pinterest, it’s hard to keep up. I would say half of the things I try are a hit, and half are a miss. One thing that’s been hard to ignore is the banana “ice cream,” a claim that you can freeze bananas, throw them in the food processor and end up with a magical ice cream-like dessert. This of course takes me back to the absolutely ridiculous Yonana Infomercial from 2011.
I’ve thought about making banana ice cream a few times, but it requires the forethought to freeze the banana. Recently I had a single overripe banana sitting lonely in the fruit bowl. My normal solution would be to make my single serving banana bread, but it was the perfect time to try out this Pinterest craze.
When I blended the frozen banana in my food processor, it first crumbled into tiny pieces. At first, I thought maybe this ice cream business was too good to be true, but as I continued blending, the mixture became creamier and creamier. Magic!!
It tasted like vanilla ice cream.. just kidding. It tasted exactly like a banana, which was to be expected. I added the tiniest bit of vanilla extract and a teaspoon or two of cocoa powder. YUM. The consistency really was just like ice cream or froyo. Of course, nothing can really substitute for ice cream, but this is a great alternative frozen treat, and certainly a lot fewer calories than my single serving banana bread.
