Vegan Chickpea Avocado Sandwich Spread

This is absolutely one of my favorite sandwiches. I posted the same exact recipe using black beans over the summer, but I usually have chickpeas on hand. I wasn’t going to post this since the recipe is exactly the same, but people seemed interested, so here it is! This is one sandwich I never get tired of.

Vegan Chickpea Avocado Sandwich Spread

Serves: 1
  • ½ cup chickpeas (garbanzo beans) drained/rinsed
  • ¼ avocado
  • less than ¼ cup of frozen corn
  • little bit of diced red onion
  • lime wedge
  • salt to taste
  • lettuce, kale or spinach (optional)
  • and of course, your favorite bread!
  1. Mash the chickpeas against the side of a bowl with a fork.
  2. Once you have a nice paste, with some full beans still left behind, mash in the remaining ingredients.
  3. If your spread needs a little something extra, try a little more salt! Spread on your favorite bread and top with lettuce, kale or spinach.
