Pasta with Slow-Roasted Tomatoes and Basil

I picked up the special summer issue of Everyday Food magazine (better late than never) and tested some recipes while at home with my parents for the last few weeks of summer. We tried three different recipes, and this one turned out to be my favorite.

Since it is a special issue, the recipe isn’t online at Everyday Food like with the normal issues. I’m against redistributing recipes that are book/magazine-only, butttttt I did happen to find it listed out somewhere else online.. and if I point you toward that site, that’s not as bad, right? Well, probably, but it makes me feel better.  Here is the recipe for the pasta, and here is instruction on how to slow-roast the tomatoes. The recipe in the magazine adds a little sugar to the tomatoes.
I am not a huge tomato fan, but they were wonderful. The pasta was light and fresh. My mom added bits of fresh mozzarella and baked chicken strips to go with it.
It may be a little late, but if you can get your hands on the summer issue of Everyday Food, grab it!

    The photo is gorgeous! It really was a wonderful dish. I’ll take the time to slow roast tomatoes before I make sauce from now on. The fresh mozzerella added to it, too!
