Fluffernutter Cupcakes

Having lost more than 10 pounds since January, I’ve been very selective about the cupcakes I make. If I’m going to indulge, it better be good! I was drooling over Gingerbread Bagel’s Fluffernutter Cupcakes, but the responsible side of me knew to avoid them. What is a fluffernutter you ask? A fluffernutter is a peanut butter and marshmallow fluff sandwich, aka one of the greatest inventions on Earth.

About a month later, Fluffernutter Cupcakes still fresh in my mind, I was asked by my friend Monica to make cupcakes for FSU Habitat for Humanity’s Seminole Shack Showdown, and I knew this was the best excuse I could ever hope for to make these delicious treats. Seminole Shack Showdown is an annual event on FSU’s campus to educate and raise awareness for substandard housing.

I’m glad I broke down and made these because they won FIRST place, and all the money raised from the competition went toward our team, helping us win second place overall. Cupcakes change lives, okay? It’s official. PS: these were delicious. I am a huge fluffernutter sandwich fan, so tasting it in cupcake form was quite the treat.
