After the Semi-Homemade Red Velvet Cupcakes were such a success, my friends and I decided this time around to make Chocolate Chip Cookie Dough Cupcakes based off of a recipe Lauren found from Babble.com. Think about it: a devil’s food cake filled with chocolate cookie dough and topped with brown sugar cream cheese frosting. YUM! The recipe offered a homemade version and then a “cheater method.” Clearly, Lauren, Nicole, Jen, Taraneh, Kie, Stephanie and I are cheaters. But you probably knew that already.
The cupcakes were delicious, and fresh from the oven the cookie dough in the center of the cupcake was still warm and soft. We oopsed with the frosting. I misread and grabbed whipped cream cheese instead of whipped cream cheese frosting. Though we loved the resulting cream cheese, it definitely was not a cupcake frosting. We re-made the frosting the right way and it was perfect.
You press the squares of cookie dough into the batter, and the batter rises up and surrounds the dough.
The cookies were the perfect color on top, but inside they were still soft and yummy!
